What is Pollo A La Brasa?
Pollo a la brasa is a whole marinated rotisserie chicken cooked and rotated over hot charcoal. It was developed in Peru in the 1950s by Roger Schuler, who was a Swiss resident in the country. He devised the specific method of cooking the chicken and perfected his technique in preparation where the cooking process is more uniformed. Pollo a la brasa was originally available in high end restaurants until the 1970s. Today, it is widely available. It is traditionally served with a creamy, mayonnaise-based sauce and served with a portion of French fries and a small salad.
